Virgin Pomegranate Mojito
A mojito, traditionally, consists of five ingredients: sugar, rum, lime juice, soda water and mint. Here is my version of a mojito that is alcohol free. It is deliciously refreshing, a perfect summer drink.

Collect it:

2 sour limes
·
1/2 cup fresh mint leaves
·
5 tbsp simple sugar syrup
·
200 ml Sprite
·
1 cup crushed ice
· 1/2
cup pomegranate juice (fresh/packet)
Make it:
MUDDLE the mint leaves and lemon wedges in the mortar pestle
(save a few leaves and lemon slices for garnish)
CRUSH the ice cubes in the blender but
make sure it still has some ice chips / rough chunks in it
TAKE two the glasses of your choice. Add some crushed ice, pour half the muddled mixture. To this add:
2.5 tbsp. of sugar syrup in each
glass,
1/4 cup of the pomegranate juice
100ml Sprite
GARNISH the glasses with mint leaves and lemon wedges.
Served chilled!
Helpful Tips:
- I omitted the sugar completely. You can adjust the sweetness.
- You could coat the rims of the serving glasses with some cayenne pepper or salt. I prefer the Himalayan pink salt.
