Pumpkin Halwa
I
had left over pumpkin, too little to make anything substantial for the whole
family, too precious to waste. Mum always says, waste not, want not. Randomly made a pumpkin halwa which I think
turned out better than I expected!
Collect it:
· 2 cups white pumpkin,
grated
· 1 cup sugar
· 2 tbsps ghee
· ¼ tsp cardamom powder
· A few saffron strands
(soaked in warm water)
· 10 almonds, 10 cashew
nuts, finely chopped (or nuts of your
choice)
Make it
Heat a kadai. ADD
ghee and pumpkin. Sauté it on a low flame till the water evaporates. Add sugar,
cardamom powder and saffron. Saffron gives is its natural colour. Add the nuts.
Cook for another 2 minutes. Garnish with nuts and serve!
Notes
For those that are
not lactose intolerant, try adding 1 tbsp condensed milk or 2 tbsp mawa. It definitely
adds to the overall flavor.
