Appe

We are off meats through the season of Lent.  On Sunday, I picked up an Appe pan and I had to get these done asap …. just to ease the appe itch. You need oodles of patience ... but it is worth the effort and patience.

Collect it:

·       3 cups rice
·       1 cup urad dal
·       I cup cooked rice
·       1 cup poha (optional)
·       1 tsp methi seeds
·       2 tbsp grated coconut
·       1 tsp finely chopped ginger *
·       1 green chillie chopped (very fine) *
·       Chopped coriander leaves *
·       Salt to taste

Make it:

Soak rice and methi seeds for 7-8 hours. Soak urad dal seperately.

Grind rice and urad dal (note: Rice has to be ground to a very fine paste. Urad dal, however, has to be slightly coarse). While grinding soaked rice, add cooked rice and poha

Mix both (rice and urad dal) together and keep it overnight. (Note: not in the refrigerator)

In the morning add green chillie, ginger, coconut and coriander leaves. Mix thoroughly and pour into the oiled moulds!

After 4-5 minutes turn the appes, 2-3 mins later it is cooked

Serve with sauce or chutney!

Notes
Also made a sweet version. Followed the same recipe without ingredients marked * Added goa jaggery as per taste.
