Baked Bhajya
This afternoon I had a
massive craving for something … more
like street food. A friend suggested bhajya. But those are greasy. Naturally, I gravitate
towards baked delights because it is much healthier and low in calories. These
baked bhajyas are easy to make. Enjoy.
Collect it:

1 large carrot
·
1 small potato
·
1 inch cubed of ginger
(2.5cm cubed)
·
1/2 tsp sea salt
·
1 small onion finely
chopped
·
1 tsp freshly ground black
pepper
·
1/2 tsp cumin seeds
·
1 heaped tsp garam
masala
·
1 handful chopped
parsley (or coriander leaves)
·
75 gms chickpea flour
Make it:
Grate the carrot, potato,
ginger using a fine grater.
Add all ingredients
into a mixing bowl (except the chickpea flour)
Sift the chickpea
flour (to avoid lumps) on top of the ingredients in the bowl.
Mix all ingredients
together thoroughly. This is easiest using your hands. Everything will come
together and bind. I didn’t use any water in this.
Line a baking tray
with parchment paper.
Spoon tablespoon sized
dollops onto the baking tray. Compress down slightly if you want them to be
more like patties.
Bake in a preheated
oven (180C) for about 25 minutes on either side. You might want to watch your oven as each oven
is different.
Enjoy with chutney
right away as a starter or snack.
