Ribbon Cake
Ribbon
cake is a soft butter cake. Don’t let the colour schemes intimidate you. It is
rather simple and fun because you will have your own unique pattern. This is
what makes ribbon cake fun!

Collect
it:

grams Unsalted Butter

grams Granulated white sugar

large Eggs

tsp Vanilla extract

grams All-Purpose Flour

1/4
tsp Salt

tsp Baking powder

Few
drops of liquid Food colors (Red and green)
Make
it:
Keep all the ingredients at room temperature.
Preheat oven to 160 degrees C.
Grease a baking pan (loaf pan) 9 x 5 x 3
inch (23 x 13 x 8 cm).
In the bowl of your electric mixer, with
the paddle attachment (or with a hand mixer), beat the butter and sugar until
light and fluffy.
Add the eggs, one at a time, beating
well after each addition. Add in the vanilla extract. Beat.
Fold in the flour (sieved with salt and
baking powder) using a spatula.
Remove 1 tbsp each of the cake batter in
2 bowls. Color each batter with red and green liquid food colors. I used gel colours, if you prefer those you
will need just a dot of gel. You could use a toothpick for this.
Pour the white batter in the pan. Layer it
with the green mixtures. You can pour it
diagonally or in a line, whatever catches your fancy.
Pour a tablespoon of white cake mixture,
and then the red mixture. Feel free to
experiment.
Pour remaining white cake mixture over
it.
Bake for about 45 minutes until risen,
springy to the touch, and a toothpick inserted into the cake comes out clean. Do not over bake.
Remove from oven and place on a wire
rack to cool for 10 minutes. Remove cake from baking pan.
Let the cake cook completely. This is very important. Cut into slices. (makes about 12 slices)
