Soya Cafreal Burgers
Chicken cafreal is a popular Goan dish. Since we are still
off meats and I am vegan, I decided to test if soya burgers are a possibility.
It is not the same as beef or chicken burgers but for me it worked.
You can substitute soya with beef or chicken. If so, omit the potatoes. Add a loaf of bread (paowala bread) soaked in water and drained to bind the mixture. You can increase the spice quotient according to taste.
Collect it:
·
1 cup (1 cup = 250 ml)
soya granules
·
2 boiled potatoes
·
1 onion, finely
chopped
·
4-5 tbsp of cafreal
masala
·
Salt to taste
·
1 beaten egg
·
Oil for frying
·
2 tbsp semolina + 1
tbsp breadcrumbs for coating
Make it:
Boil water and soak soya granules. Let it rest a bit. Drain all water and set
aside.
Grate boiled potatoes and set aside.
In a pan, sauté onions till they turn light golden brown. Add
cafreal masala. Remove from the gas and cool.
Mix together soya, potato and onion mix. Add salt to taste. Make
even sized balls and flatten to get a burger. Dip in egg, coat with semolina
and breadcrumb mix. Grill or shallow
fry.
